Ingredients
- 1 cup packed brown sugar
- 1/4 cup sugar
- 3/4 cup (1 1/2 sticks) butter, softened
- 2 cups uncooked old-fashioned oats
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon honey (Imitation honey can be used if baking for someone with an allergy)
- 1 teaspoon of vanilla
- 1 egg
- 1 1/3 cups of all-purpose flour
Instructions
- Preheat oven to 350° F
- "Cream" the butters by mixing them with sugars and vanilla until
smooth.
Scrape the bowl if necessary.
- While mixing, add in the baking soda, baking powder, honey, and salt
- Mix in the egg
- Gradually mix in the flour and mix until just blended
- Drop rounded tablespoonfulls of dough onto a cookie sheet
- Bake for 14 - 16 minutes until puffed and golden
- Let cool for 5 minutes, and then transfer to wire racks to cool completely
