Ingredients
- 1/2 cup peanut butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup (1 stick) butter, softened
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 1 egg
- 1 1/4 cups of all-purpose flour
Instructions
- Preheat oven to 375° F
- "Cream" the butters (including the peanut butter) by mixing them with sugars and vanilla until
smooth.
Scrape the bowl if necessary. - While mixing, add in the baking soda and salt
- Mix in the egg
- Gradually mix in the flour
- Roll the dough into 1 inch balls and place them on a cookie sheet about 2 inches apart on ungreased cookie sheets
- Bake for 10 - 12 minutes until golden brown
For that "traditional" peanut butter cookie look, press the dough flat with a fork in a criss-cross patter prior to baking them. (About 1/4 inch thick when pressed.)
