Peanut Butter Cookies

  1. Preheat oven to 375° F
  2. "Cream" the butters (including the peanut butter) by mixing them with sugars and vanilla until smooth.
    Scrape the bowl if necessary.
  3. While mixing, add in the baking soda and salt
  4. Mix in the egg
  5. Gradually mix in the flour
  6. Roll the dough into 1 inch balls and place them on a cookie sheet about 2 inches apart on ungreased cookie sheets
  7. Bake for 10 - 12 minutes until golden brown

For that "traditional" peanut butter cookie look, press the dough flat with a fork in a criss-cross patter prior to baking them. (About 1/4 inch thick when pressed.)
